4 cups chopped kimchi, drained
2 tablespoons vegetable oil
2 cloves garlic, minced
1/4 cup unsweetened peanut butter
1/4 cup coconut milk
1 tablespoon soy sauce
1 tablespoon honey or brown sugar
1 teaspoon grated ginger
1/2 teaspoon crushed red pepper flakes
2 tablespoons chopped cilantro or green onions, for garnish
Heat vegetable oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 1-2 minutes.
Add chopped kimchi to the skillet and cook for 3-4 minutes, until slightly softened.
In a small bowl, whisk together peanut butter, coconut milk, soy sauce, honey or brown sugar, ginger, and crushed red pepper flakes until smooth. Pour the sauce over the kimchi and stir to combine.
