About the Recipe
2 cups cooked brown rice or quinoa
1 cup chopped kimchi, drained
1 cup chopped kale or spinach
1 cup shredded purple cabbage
1 cup cooked chickpeas, rinsed and drained
1 avocado, sliced
1/4 cup chopped green onions
1/4 cup toasted sesame seeds
For the sesame dressing:
3 tablespoons sesame oil
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon honey or agave syrup
1 teaspoon grated ginger
Salt and pepper, to taste
In a small bowl, whisk together the sesame dressing ingredients: sesame oil, rice vinegar, soy sauce, honey or agave syrup, grated ginger, salt, and pepper. Set aside.
To assemble the bowls, divide the cooked brown rice or quinoa between two serving bowls.
Arrange the chopped kimchi, kale or spinach, purple cabbage, chickpeas, and avocado slices on top of the rice or quinoa in each bowl.
Drizzle the sesame dressing over the bowls, and garnish with chopped green onions and toasted sesame seeds.
