Kimchi Pancake with Kodiak Cake Mixes

  • 2 cups Madame Kimchi, chopped

  • 2 cups high protein pancake mix (e.g., Kodiak Cakes)

  • 1 cup water

  • 2 eggs

  • 4 green onions, chopped

  • 1 tsp salt

  • Oil for frying


  • 1 cup sour cream

  • 4 tbsp pomegranate molasses

  • 2 tsp chile paste (optional)


Step 1

In a large bowl, combine the chopped Madame Kimchi, pancake mix, water, eggs, green onions, and salt. Mix well.

Step 2

Heat oil in a frying pan over medium heat.

Step 3

Scoop about 1/4 cup of the batter onto the pan and spread it out to form a pancake.

Step 4

Cook until the edges are golden brown and the pancake is set, about 2-3 minutes. Flip and cook for another 2-3 minutes.

Step 5

Repeat steps 3-4 until all batter is used. You should end up with about 8 pancakes.

Step 6

Prepare the topping by mixing sour cream, pomegranate molasses, and chile paste (if using).

Step 7

Serve the pancakes hot, with a dollop of the topping!
